Scrambled Eggs for Seven
Though eggs in and of themselves are naturally rich and filling, we bring it up a notch or two by gently melting in a bit of cream cheese just as the eggs finish cooking. You won’t believe how creamy and smooth they become. You’ll never go back to scrambling any other way.
12 eggs
1/4 cup half-and-half
1/3 package cream cheese (cut into bite-sized pieces) salt and pepper
Step 1: Melt butter into a large skillet on medium-low.
Step 2: Crack eggs into a large bowl and whisk with half-and-half.
Step 3: Gently pour into the skillet and stir constantly with a silicone spatula.
Step 4: Just before the eggs set, stir in cream cheese.
Step 5: Salt and pepper to taste. Serve alone or on thick buttered toasted brioche.
