Arugula, Bacon, Avocado, & Pistachio Salad
The first time my cousin Chrishelle made me this, it surprised me. Never before had I thought of arugula, bacon, pistachios, and avocado together. Boy, was I in for the tastiest revelation! The creaminess of the avocado pairs perfectly with the saltiness of the bacon. Meanwhile, the pistachios, fresh arugula, and light vinaigrette are meant to be together for eternity. We serve it alongside grilled chicken or steak on warm nights when no one wants to be inside.
4 strips thick-sliced bacon, diced
2 cups red grapes, halved
1 bag of arugula
1 avocado, diced
1⁄4 cup roasted salted pistachios
VINAIGRETTE
1⁄4 cup rice vinegar
3 tablespoons olive oil
1 tablespoon minced shallots 1 teaspoon honey
1 teaspoon dijon mustard salt and pepper to taste
Step 1: Combine the grapes and arugula in a large bowl.
Step 2: Mix vinaigrette ingredients together, pour over the grapes and arugula, and toss.
Step 3: Garnish with avocado, bacon, and pistachios.
