Glass Pecans

I have a confession: I’ve never been a fan of pecans. Pecan pie? Pass. Pecan cookies? No, thank you. But this simple Glass Pecan recipe completely changed my mind. Audrey and I had a blast making it together, and I have to admit – it’s dangerously delicious.

1 large bag of pecans (or as many as you’d like!)

Avocado oil

Powdered sugar (enough to generously coat your pecans)

Salt

Water

Step 1: Bring a pot of salted water to a boil. Add the pecans and blanch them for about 4 minutes. Once done, strain and let them dry for a few minutes.

Step 2: In a large container with a lid (think Tupperware), add enough powdered sugar to coat your pecans. Toss the pecans into the container, close the lid, and shake it up until every pecan is coated in sugary goodness.

Step 3: Heat a generous amount of avocado oil in a pan over medium heat. Once the oil is hot, add enough pecans to fill the bottom of the pan in a single layer. Let the pecans fry for 5-8 minutes, stirring occasionally.

Step 4: Carefully remove the pecans and place them on a drying rack or paper towels to soak up any extra oil. Continue process until all pecans are used.

Step 6: While they’re still warm, sprinkle with a little more powdered sugar for good measure.
