Bacon-Wrapped Dates
This bacon-wrapped date recipe is a true treasure, passed down to us by our cherished friend, Jillian. These little bites are packed with the perfect balance of sweet, smoky, and savory flavors, making them an irresistible addition to any gathering. The best part? They’re incredibly simple to make. Whether you’re hosting a holiday party or looking for an easy appetizer to impress your guests, these bacon-wrapped dates are guaranteed to steal the show.
1 container of fresh, tender Medjool dates (make sure they are opened and pitted)
1 container of almonds (I use Blue Diamond Smokehouse Almonds)
1 package of thin-sliced bacon

Step 1: This step is optional, but recommended. Preheat your oven to 400°F. To ensure the bacon is crispy once wrapped around the dates, pre-cook it slightly. Lay the bacon strips on a baking sheet lined with foil and bake for about 5 minutes. The bacon should be halfway cooked – firm yet soft enough to wrap around the dates easily. Set aside to cool.
Step 2: Carefully stuff each pitted date with a smoked almond. Press the date closed gently around the almond.
Step 3: Cut each strip of bacon into thirds (or halves, depending on the size of your dates). The bacon should be just long enough to wrap around the date without overlapping too much.
Step 4: Heat a skillet over medium heat. Place the partially cooked bacon strips in the skillet and cook for about 1-2 minutes on each side, or until they start to crisp up slightly but remain flexible for wrapping. Set aside to cool slightly.
Step 5: Wrap a piece of bacon around each stuffed date and secure it with a toothpick to hold it in place.
Step 6: Place the bacon-wrapped dates seam-side down on a baking sheet lined with foil (for easy cleanup). Bake in the preheated oven for 15 minutes, or until the bacon is crispy and the dates are heated through.
Step 7: Let the dates cool slightly before serving.
