Jane's Chocolate Lava Cake

Chocolate. Lava. Cake. Need I say more? If you’ve had it, you know why. If you haven’t, buckle up for a life-changing moment. It’s an easy crowd-pleaser and never gets old. My friend Jane gave it to me twenty years ago, and I still make it to this day.

2 eggs

1 cup sugar

1⁄2 cup flour

1/4 teaspoon salt

1 stick butter (plus more for greasing pan) 2 heaping tablespoons cocoa

1 teaspoon vanilla

Step 1: Preheat the oven to 300°F.

Step 2: Grease a loaf pan.

Step 3: Beat the eggs, sugar, flour, and salt together.

Step 4: Stir cocoa into melted butter and add vanilla.

Step 5: Pour the cocoa mixture into the egg mixture and stir to combine. Step 6: Pour the batter into the prepared pan and bake for about 35 minutes.

When the middle is still pudding-y remove from the oven and serve warm with extra-creamy vanilla ice cream and berries.

*Note, do not over bake!

I love to cook individual desserts for dinner parties. I think it makes people feel extra-special and more cared for when you have prepared something especially for them.

To make personal chocolate lava cakes, pour the batter into individual ramekins (don’t forget to butter them!) and bake until the centers are just set and top with vanilla ice cream.
