Farm-Fresh Pesto Sammies
These pesto sandwiches taste like a summer garden. In reality, they are assembled more than cooked... perfect for those days when it is too hot to cook in the kitchen.
Note: The fresher the basil and tomatoes, the better the sandwiches. A watery, mealy tomato will ruin the whole effect. If you don’t have a summer garden, go to your local farmer’s market and find the best produce you can, along with some freshly baked bread. Believe me, the quality of the ingredients can make or break this sandwich.
4 slices ciabatta bread or rolls prepared pesto
fresh tomato
fresh mozzarella
fresh basil
Step 1: Drizzle olive oil on two slices of bread.
Step 2: Broil until toasted.
Step 3: Spread pesto on top of each slice.
Step 4: Cut mozzarella and place on the bread.
Step 5: Place back under the broiler on a lower rack (be sure and keep a close watch!).
Step 6: After the cheese has melted, remove the bread slices from the oven and top with sliced tomato and freshly chopped basil leaves.
