Cherry Cobbler
Featured in my episode with Homeworthy, “At Home with Ruth McKeaney | Get Ready for Friendsgiving | Easy Dinner & Appetizer Recipes,” this cherry cobbler was the perfect sweet ending to our Friendsgiving celebration. Warm, comforting, and oh-so-delicious – it's a dessert that brings everyone to the table.
FILLING
2 lbs tart cherries
1 cup sugar
1 tbsp almond extract
4-6 tbsp corn or arrowroot starch
CRUMB TOPPING
3 cups flour
2 cups sugar
1 lb butter
3/4 cup old fashioned oatmeal
1 tbsp vanilla extract
Step 1: Preheat oven to 350 degrees.
Step 2: In a deep 13x9 baking dish, combine all cherry filling ingredients and mix well. Place in 350 degree oven and bake for 15 minutes.
Step 2. Cube butter into 1/2” cubes, place in the bottom of a food processor, then add remaining crumb topping ingredients on top. Pulse until well blended and butter is completely incorporated.
Step 3: Take hot cherry filling out of the oven.
Step 4: Grab crumble topping by the handful and crumble evenly over cherry filling, compressing the crumble down in some areas. Add as much crumble filling you need until it’s completed covered.
Step 4: Place back in oven and continue baking for 30-45 minutes until filling is thick and bubbly.
Step 5: Serve with vanilla ice cream, and enjoy!
