Rustic Summer Blueberry Tart
Tarts are synonymous with the warm weather months. This particular blueberry version is an elegant edition to a late summer BBQ. It’s gorgeous while maintaining a rustic simplicity. And it really is a treat for all of your senses.
TART SHELL
1 1⁄2 cups flour
3 tablespoons sugar
1 1⁄2 tablespoons cider vinegar
1 1⁄2 sticks of butter
a pinch of salt
FILLING
6 cups fresh blueberries (not too ripe)
3⁄4 cups sugar
3 tablespoons flour
3 tablespoons butter to dot on top
PREPARE SHELL
Step 1: Preheat the oven to 400°F and grease a 10-inch tart pan.
Step 2: Pulse flour, salt, sugar, vinegar, and butter in a food processor until crumbly.
Step 3: Press dough evenly into the tart pan.
ASSEMBLE TART
Step 1: Toss 4 cups of blueberries with the sugar and flour.
Step 2: Fill the prepared shell with 4 cups of the blueberry filling.
Step 3: Dot the top with the butter.
Step 4: Bake for 1 hour.
Step 5: Allow to cool.
Step 6: Pour the remaining 2 cups of fresh blueberries on top of the baked tart.
*Blackberries, marionberries, or currants (or a mixture of all three) can be substituted for the blueberries.
